Cranberry Celebration Salad: Copycat Kroger Recipe

I love the flavor of cranberry in all sorts of dishes! From drinks to breads, I find them refreshing! But the one thing I’m not a huge fan of is traditional cranberry sauce. I like my cranberries a bit on the sweet side versus tart. And often, delicious homemade cranberry sauce is just a bit too tart for me. Joanne Andrea recently made this copycat recipe of Krogers (Frys )Cranberry Celebration Salad. According to Joanne, “This stuff is SO addicting, you can eat it on turkey, leftover turkey sandwiches, crackers, toast, spoons, your finger, etc.!! Seriously, if you’ve had this salad from their deli, you know how good it is!” But I haven’t had the pleasure of trying this salad because I don’t have a Kroger or Frys grocery store near me in Minnesota. I feel like I’ve been missing out. Thankfully I now know about this amazing salad so I can taste test it to be sure!

Cranberry Celebration Salad: Copycat Krogers Recipe

Ingredients

  • 15 oz. pineapple, crushed
  • 1 can (15 oz) cranberry sauce with whole cranberries
  • ½ cup cranberry juice
  • 2 tabelspoon lemon juice
  • 1 package (3 oz) raspberry (or cherry) JELL-O gelatin
  • ½ cup walnuts, chopped medium fine

Instructions

  1. Drain the pineapple and reserve juice.
  2. In a pot, blend pineapple juice, cranberry juice and lemon juice together. Bring to a boil and add Jell-O powder, stirring thoroughly!
  3. Add the can of cranberry sauce and combine well
  4. Transfer to a bowl and set in the fridge for approximately 1.5 hours or until the mixture begins to set.
  5. Add walnuts and pineapple. Stir well.
  6. Return to the fridge to set. The mixture will not set up as firm as regular gelatin does.
  7. Before serving, give mixture a good stir.
